The decoration of ceramic tiles “ink-jet revolution” has brought significant advantages to tiles manufacturing, but the explosive diffusion, until 4-5 years ago, of this technique has not been accomplished by an adequate scientific research. Among all the features that have to be studied yet, one of the most important is the influence of the new generation inks on the total emission at ceramic chimneys. In this paper, we present a first characterization of emissions from a set of commercial inks and vehicles: they were collected by propter firing of samples in an electric kiln and analyzed by GC-MS. This study is part of a larger research project, which includes the chemical characterization and the evaluation of thermal behavior of inks and vehicles by TG-DTA and other techniques. The obtained results permit to divide common vehicles into 3 classes, depending on their thermal behavior and emissions pattern. Inks, most of which present an ester based formulation, sometimes mixed with glycols or paraffins, follow the behavior of their single components. The most common formulation leads to the presence in the emission pattern of evaporation products (2-ethylhexyl esters of lauric, myristic, decanoic and octanoic acids) and decomposition products (mainly aldehydes and 2-ethyl-1-hexanol).

The study of the headspace components of fresh smoked goat cheese, was carried out by means of solid-phase microextraction using a polyacrylate fiber followed by gas chromatography/mass spectrometry. The samples studied were six artisan Palmero cheeses manufactured following traditional methods and smoked using pine needles. The cheese regions studied were exterior, interior, and a cross section. In total, more than 320 components were detected, the exterior region being the richest in components, among which were acids, alcohols, esters, hydrocarbons, aldehydes, ketones, furan and pyran derivatives, terpenes and sesquiterpenes, nitrogen derivatives, phenol, guaiacol and syringol derivatives, ethers, and others. In addition to typical cheese components, typical smoke components were also detected; these latter were present especially in the headspace of the exterior region and only those in significant concentrations in the exterior region were also detected in the interior. The main components were acids and phenolic derivatives. These latter compounds play an important role in the flavor of this cheese, and their relative proportions together with the presence of specific smoke components derived from pine leaves may be considered of interest in order to distinguish this cheese from others smoked with different vegetable matter. A rapid screening protocol incorporating key elements of the US National Toxicology Program’s immunotoxicity tier testing strategy was used to evaluate the effects of 35 commonly used food flavouring ingredients on humoral and cell-mediated immune responses. Humoral immunity was measured by the antibody plaque- forming cell (PFC) response to sheep erythrocytes. Body weights, lymphoid organ weights and spleen cellularity were also measured. Cyclophosphamide (80 mg/kg) served as an immunosuppressive positive control agent. The results indicated that the majority of the flavouring ingredients tested did not modulate the cell-mediated or humoral immune response. However, at very high dose levels, two of the materials tested, peppermint oil and citral dimethyl acetal, did increase mortality rate and reduce survival time in the host resistance assay. Neither of these materials significantly altered the PFC response. This rapid, economical screening battery for potential immunotoxicants proved to be a useful means of evaluating a large number of structurally diverse compounds and mixtures to prioritize them for more definitive testing.

This brief data article refers to the previous exploration of Scenedesmus obliquus and Phormidium autumnale biomass about the possibility of using these microalgae species as an unconventional functional food. Data on chemical composition, fatty acids, volatile compounds, and carotenoid profiles were determined. In parallel, are provided the antioxidant capacity (reducing capacity – RC and reactive oxygen species deactivation – ORAC) of aqueous, lipophilic, and carotenoid extracts isolated from microalgae biomass. Both species have similar compounds in their biomass. However, S. obliquus was statistically different with a lower saturated fatty acid (STF) followed by higher mono (MUFA) and polyunsaturated (PUFA) content, also showed higher antioxidant potential for acetone extract and isolated carotenoids. On the other hand, P. autumnale aqueous extract showed high RC and ORAC. The significance of the experimental data was determined using the t-test (p < 0.05) based on the Statistica 7.0 software. Improvement of flavour quality and consumer acceptance during postharvest ripening in greenhouse peaches by carbon dioxide enrichment

In this study we assessed the impact of carbon dioxide enrichment (CDE) on flavour quality development of peach fruit, using peach trees grown in a greenhouse with a carbon-dioxide-enriched atmosphere. Fruit sugar, organic acids, volatiles contents and consumer acceptability were investigated, focusing on the period of postharvest ripening. Higher levels of sucrose, lactones, norisoprenoids, and lower levels of malic acid were found in CDE-treated fruit than those in the control fruit grown under normal conditions. We also measured significantly elevated amounts of pyruvic acid, precursors of volatile compounds, linoleic acid and linolenic acid as a result of CDE. Additionally, CDE-treated fruit were relatively well accepted by consumers compared to the control fruit. These results suggested that CDE can markedly improve the flavour quality and consumer acceptance of greenhouse-grown peaches. The possible mechanism could be that CDE increased precursors available for the biosynthesis of flavour compounds through regulation of photosynthesis.

Microbial dynamics and metabolite changes in Chinese Rice Wine fermentation from sorghum with different tannin content

Chinese rice wine (CRW) is the oldest kind of wine in China and is mainly fermented by wheat Qu and yeast with rice, millet, etc. This gives CRW a unique quality, but the flavor components are complex. Its formation is related to microorganisms, but the link between CRW and microorganisms is poorly understood. Here, we used two kinds of sorghum (JZ22 and JB3, of which JZ22 has a higher tannin content) as the raw materials to brew and determined the structural and functional dynamics of the microbiota by metagenomics and flavor analyses. We detected 106 (JZ22) and 109 (JB3) volatile flavor compounds and 8 organic acids. By correlation analysis, we established 687 (JZ22) and 496 (JB3) correlations between the major flavor compounds and microbes. In JZ22, Blautia, Collinsella, Bifidobacterium, Faecalibacterium and Prevotella had the most correlations with flavor production. In JB3, the top 5 genera were Stenotrophomonas, Bdellovibrio, Solibacillus, Sulfuritalea and Achromobacter. In addition, more esters were detected, and more microorganisms correlated with ester generation in JZ22. This study provides a new idea for the micro ecological diversity of CRW fermented with sorghum. This is of significance for improving the quality and broadening the CRW varieties.

Dual-fiber solid-phase microextraction coupled with gas chromatography?mass spectrometry for the analysis of volatile compounds in traditional Chinese dry-cured ham

For the purpose of obtaining a more comprehensive flavor profile, volatile compounds in traditional Chinese dry-cured hams were studied by dual-fiber solid-phase microextraction (SPME) using two fibers simultaneously. By using the selected pair of fibers and under the optimal extraction time, there were total seventy-two volatile compounds identified, which was higher than the mono-fiber SPME method using a single fiber. Out of the seventy-two compounds, twenty-six compounds were not detected by using mono-fiber SPME and five among them are classified as the major aromatic compounds in the literatures. Due to the higher coverage and less tendency for the occurrence of competition among the volatiles, the total amount of volatiles extracted by dual-fiber SPME (510.02 ng/kg) was higher than mono-fiber SPME. Three grades of dry-cured hams were successfully distinguished based on dual-fiber SPME. The volatile compounds belonged to nine chemical families and differed in different grades of dry-cured hams. These results show that dual-fiber SPME is capable of analyzing flavor profiles more comprehensively and distinguishing traditional Chinese dry-cured hams.

Solvent-free Hydrodeoxygenation of Gamma-Nonalactone on Noble Metal Catalysts Supported on Zirconia

The possibility to valorize levulinic acid (LA) dimers to lignocellulose-based biofuels via hydrodeoxygenation (HDO) was assessed using gamma-nonalactone (GNL) as a model compound. Catalytic HDO experiments were performed in a batch reactor at 280 C and at an average pressure of 57.5 bar H2. Noble metal (Ru, Rh, Pd, and Pt) catalysts supported on ZrO2. All the catalysts were active in removing oxygen from the reactant. However, the most selective catalyst for hydrocarbons (24%) was ruthenium. Unlike the other tested catalysts, Ru also provided branched hydrocarbons. In view of Ru?s comparatively high selectivity to hydrocarbons, it was tested at various reaction temperatures (220?280 C) for 300 min. The experiments at lower temperatures resulted in less hydrocarbons and more intermediate products, such as alcohols. In total, nearly 70 products were identified, and some of the reactions that likely occurred in the HDO experiments were discussed. The production of hydrocarbons from GNL highlights the potential of LA dimers as a route to lignocellulose-based biofuels.
